Watermelon Rind Slaw
Adapted from National Watermelon Board
¼ cup Poppyseed Dressing
1 cup grated watermelon rind with fruit and green peeled and removed
½ cup grated carrots
1 can pineapple tidbits, drained
Combine all ingredients and mix well until coated with dressing. Serve as a side at a barbeque, sandwich topper, or picnic pairing.
