Immune Promoting Foods to Pack in the Lunch Boxes

By April Sins, MS, RDN, LDN

There are mainly 5 vitamins and 4 minerals that are immune promoting nutrients. Let’s look at a few ways that we can get the most nutrition in our lunch box:

1) Add a source of Vitamin C – Grape snacking tomatoes or mandarin cups make a great finger food

2) Add a source of Vitamin A – Carrots or Bell Peppers with Hummus

3) Add a source of Vitamin D – Choosing milk over sugary drinks or juice can help add a source of Vitamin D

4) Add a source of Vitamin E – Adding nuts or seeds mixed with dried fruit, or having a peanut butter sandwich

5) Add a source of B6 – choosing chickpea pasta noodles or hummus

6) Add whole grains – Whole grains are a source of iron, selenium, magnesium, and zinc which are all immune promoting minerals. Ex. Whole grain pita bread, whole wheat crackers
