Rouses Dietician, April Sins, joined News15 at Noon virtually to share some easy ways you can cook seaood during the lenten season. Sins also shares a quick and easy seabass dish you can make for your family.
Sins used Barramundi fish which is a sustainable seabass. This recipe would be good with just about any kind of fish.
INGREDIENTS LIST FOR THE GARLIC BUTTER COD WITH LEMON ASPARAGUS
1 medium cod fillet, cut in 3 or 4 chunks (or halibut fillet)
2 bunches of asparagus, rinsed and trimmed
1 teaspoon olive oil
2 teaspoons minced garlic
1/2 cup (125ml) low-sodium vegetable broth (or white wine)
1/2 stick unsalted butter
1 tablespoon hot sauce, optional (we used Sriracha)
Juice of 1/2 lemon
1 tablespoon minced parsley (or cilantro)
Crushed red chili pepper flakes, optional
Slices of lemon, for garnish
